What you need:
4 medium fresh zucchini
1 small onion
2 tbs of extra virgin olive oil
1/2 glass of milk ( I use almond or soy milk, but any kind of skim milk is fine)
1/2 tsp of salt
1/4 tsp of pepper
Put the zucchini in the pan with the onion, and add the milk, salt and pepper.
Put the lid on and let it cook for about 30 minutes or until the zucchini are tender.
Turn the heat off, let it cool a little, and put it in a blender. I usually blend it in 2 times, it is easier!
Et voila'! Zucchini sauce ready to serve with pasta, or if you prefer, eat it just like that, straight from the bowl!
I use an immersion-type of blender. They're easier to use and easy to wash!
ReplyDeleteAny type of blender works fine! I just prefer the texture of my blender rather than the minipimer!
